Cabbage patties with semolina are a meatless, vegetarian dish made with finely chopped, partially cooked cabbage. Mix the cooled cabbage with onion sautéed in butter until translucent, eggs, semolina, herbs, salt, and pepper, then let the mixture stand for ten minutes so the semolina can absorb moisture. Shape it into twelve patties and fry them in oil, covering the pan after turning them. Serve them as a main dish on their own or as a side dish with meat.

Instructions

Tip: tap a step to mark it as done.

  1. Bring a pot of water to a boil. Finely chop the cabbage and boil for 7–10 minutes, until partially cooked. Peel and finely dice the onions. Sauté them in the heated butter until translucent, then transfer to a plate to cool.

  2. Drain the cooked cabbage and let it cool completely. Transfer to a bowl and add the onions, two eggs, salt, semolina, fresh or dried herbs, and black pepper to taste.

  3. Mix well and let stand for 10 minutes to allow the semolina to absorb moisture. Using your hands, shape the mixture into 12 balls. Heat a generous amount of oil in a skillet and fry until golden on one side, then turn and finish cooking with the lid on.

  4. Fry over high heat.

Tip: For a lighter version, bake the patties in the oven at 180 °C (350 °F). Sprinkle with sesame seeds once cooked, if desired.

  5. Serve cold or warm, with any sauce you like, if desired.

Tip: Squeeze the cooled cabbage between your hands or through a clean kitchen towel to remove excess water. A mixture with less water holds together better, so the patties won't fall apart when you turn them.
