These zucchini and meat patties with semolina combine ground meat and grated zucchini and are lightly coated in breadcrumbs before frying. There is no need to peel or seed the zucchini; just salt it, let it stand for ten minutes, and squeeze it thoroughly. Fine wheat semolina (farina) and eggs hold the mixture together, and you can use any kind of ground meat. These patties are especially good for summer, when zucchini is plentiful. Serve them with fresh vegetables, garlic sauce, or roasted potatoes.

Instructions

Tip: tap a step to mark it as done.

  1. Wash the zucchini and coarsely grate it; there is no need to peel it or remove the seeds. Sprinkle with salt and let stand for 10 minutes to release its water. Squeeze out the water, then add the eggs, ground meat, semolina, salt, and pepper. Mix thoroughly and let rest for about 15 minutes so the mixture comes together.

  2. Heat the oil in a skillet. Shape the mixture into patties or thicker cakes with your hands, lightly coat them in breadcrumbs, and fry until golden brown. Serve with fresh vegetables, a sour cream and garlic sauce, or roasted potatoes.

Tip: Squeeze the zucchini in a clean kitchen towel to remove much more water than you can with your bare hands. Fry thicker patties over medium heat so the meat has time to cook through before the breadcrumbs get too dark.
