Instructions

Tip: tap a step to mark it as done.

  1. Cook the potatoes

    25 min

Boil the potatoes in their skins until tender, about 20–25 minutes. Peel, mash, and let cool.

  2. Prepare the mixture

    10 min

Drain the tuna well and flake it with a fork. Add it to the potatoes along with the egg, finely chopped scallions, parsley, salt, and pepper. Mix to combine.

  3. Shape the patties

    5 min

With damp hands, shape the mixture into 8 patties and coat them in breadcrumbs.

  4. Pan-fry the patties

    10 min

Pan-fry the patties in the oil over medium heat for 3–4 minutes per side, until golden brown. Serve with a vegetable salad.

Tip: Let the potatoes cool before mixing; warm mashed potatoes make the patties soft and cause them to fall apart during frying.
