Slivková bublanina is a Slovak fall fruit cake made with a fluffy batter of eggs, sugar, flour, and oil, topped with plum halves and cinnamon sugar. The plums sink into the batter as it bakes, creating the characteristic “bubbles” that give bublanina its name.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the plums

    10 min

Preheat the oven to 180 °C (350 °F). Wash, halve, and pit the plums. Mix the sugar for sprinkling with the cinnamon.

  2. Make the batter

    10 min

Beat the eggs with the sugar and vanilla sugar until light and foamy. Pour in the oil and milk, then stir in the flour and baking powder.

  3. Bake

    35 min

Pour the batter into a greased and floured baking pan approximately 25 × 35 cm. Arrange the plums on top, cut side up, and sprinkle with the cinnamon sugar. Bake for 30–35 minutes, until golden.

Tip: Arrange the plums cut side up to keep their juices in the fruit. For sweet late-season plums, half the cinnamon sugar is enough.
