Slovak potato salad without mayonnaise is a lighter version of a favorite side dish, brought together with a mustard-vinegar dressing. Potatoes boiled in their skins are sliced and mixed with finely chopped onions and pickles. The dressing is made with broth, sugar, vinegar and mustard, briefly brought to a boil and left to cool. The salad tastes better after resting in the refrigerator for a while. Serve it with breaded cutlets, fish or roasted meat.

Instructions
Tip: tap a step to mark it as done.
Boil the potatoes in their skins, peel them and cut them into rounds, then cut the rounds in half if desired. Add the finely chopped onions and pickles, and season with salt and pepper. Pour the cooled dressing over the salad, mix well and adjust the seasoning with salt, vinegar or pickle brine to taste.
Refrigerate the salad to chill and let the flavors meld, then stir again before serving.
For the dressing, add the sugar, mustard, vinegar, a pinch of salt and ground black pepper to the vegetable or meat broth.
Stir the dressing, bring it to a boil and remove from the heat.
Tip: Waxy salad potatoes (Slovak cooking type A) hold their shape when boiled, so the slices will not fall apart when mixed with the dressing, even after resting.
