These walnut and apricot jam bars have a tender crust and a walnut meringue topping. The dough, made with butter, sugar, egg yolks, lemon juice, and flour, is first baked for 15 minutes. It is then spread with jam, covered with a mixture of egg whites, sugar, and ground walnuts, and baked for another 15 minutes at 180 °C (350 °F). The jam, ideally homemade, adds a bright flavor, and the bars are a good choice for celebrations and family gatherings.

Instructions

Tip: tap a step to mark it as done.

  1. Combine the butter, 100 g sugar, 4 egg yolks, lemon juice, and baking powder in a bowl. Add the flour and work into a dough.

  2. Spread the dough on a baking sheet lined with parchment paper. Bake in an oven preheated to 180 °C (350 °F) for 15 minutes.

  3. Mix the egg whites with the remaining sugar and ground walnuts. Spread the baked crust with apricot jam, then spread the walnut mixture over the top.

  4. Return to the oven and bake for another 15 minutes. Serve.

Tip: Spoon the walnut mixture over the jam in dollops, then spread it with a spatula dipped in water. This keeps the sticky mixture from dragging and mixing with the jam.
