These walnut-shaped cookies with nut cream and apricot jam are small treats suitable for any occasion. Press the buttery dough made with ground nuts and egg yolks into walnut-shaped molds, make an indentation with your thumb, and bake for just 8 to 10 minutes at 180 °C (350 °F). Fill the cooled halves with a cream made from butter, sugar, nuts, and apricot jam. Before serving, let them soften in an airtight container for at least a day. Since they disappear quickly, consider making a larger batch.

Instructions
Tip: tap a step to mark it as done.
- Combine the dough ingredients and work into a dough, then press it into walnut-shaped cookie molds. Make an indentation in each with your thumb to leave room for the filling, as the dough will expand during baking.
- Bake in an oven preheated to 180 °C (350 °F) for 8–10 minutes, until the edges are nicely browned but not burnt. Remove the cookies from the molds while still hot and let cool.
- For the filling, beat the butter with the sugar, then add the nuts and jam and mix thoroughly. Fill the baked cookie halves with the cream and sandwich them together. Place in an airtight container and let soften for at least 1 day.
- Coat the finished cookies in powdered sugar mixed with vanilla sugar or cocoa powder. Alternatively, leave them uncoated.
- This recipe makes approximately 50 cookies. For more guests, make a double batch.
Tip: If a cookie does not release from its mold, tap the edge of the mold against a board while it is still hot. Fill the indentations only to the rim, as excess filling will squeeze out when you join the halves.
