Instructions

Tip: tap a step to mark it as done.

  1. Prepare the parchment paper

    10 min

Preheat the oven to 170 °C (340 °F). Use a pencil to draw 8 × 6 cm rectangles on parchment paper, leaving 3 cm between them. Turn the paper over so the pencil marks face down.

  2. Mix the batter

    10 min

Beat the egg whites with the powdered sugar until thick and foamy, about 3 minutes. Fold in the walnuts and flour, then the lukewarm melted butter.

  3. Bake and roll

    40 min

Spread a thin layer of batter over each rectangle, making only four at a time because they need to be rolled while warm. Bake for 6–8 minutes, until the edges turn golden. Immediately lift the wafers off the paper, roll each one around the handle of a wooden spoon, hold briefly, and slide it off. Repeat with the remaining batter.

  4. Make the buttercream

    5 min

Beat the softened butter until fluffy, then gradually beat in the dulce de leche.

  5. Fill the rolls

    35 min

Use a piping bag to fill the cooled rolls with buttercream from both ends. Refrigerate for 30 minutes to set.

Tip: If a wafer hardens on the baking sheet before you can roll it, return the sheet to the oven for half a minute to soften it again. Unfilled rolls will keep in a container for a week; fill them a day or two before serving.
