Walnut snowball cookies are tender, buttery cookies with chopped walnuts, shaped like little snowballs and rolled in powdered sugar. The walnuts are first toasted in a dry skillet for about three minutes, then mixed with flour, sugar, butter, and vanilla sugar. The dough rests in the refrigerator for half an hour before being shaped into balls and baked at 180°C (350°F). Once baked, the cookies are rolled in powdered sugar and make a fitting addition to a Christmas table.

Instructions

Tip: tap a step to mark it as done.

  1. Finely chop the walnuts without grinding them to a powder, then toast them in a dry skillet for about 3 minutes.
  2. In a large bowl, mix the flour with the toasted walnuts and powdered sugar, then add the softened butter and vanilla sugar. Work the mixture with your hands until it forms a cohesive dough.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Meanwhile, preheat the oven to 180°C (350°F).
  4. With wet hands, shape the dough into balls about 2.5 cm across and arrange them on a baking sheet lined with parchment paper.
  5. Bake for about 15 minutes. The baked cookies should be firm but not brown.
  6. Meanwhile, sift powdered sugar into a deep plate and roll the cookies in it while they are still warm.

Tip: Roll the warm cookies in sugar, then coat them again once cool—the first layer will partially melt and soak in, while the second will stay snowy white. Let the toasted walnuts cool before mixing them into the dough.
