These brown sugar quark cookies need just quark (farmer's cheese), butter, and all-purpose flour, plus cane sugar for coating. The dough is made by beating butter with quark, then mixing in flour, and chilled for half an hour. Rounds are then cut out, coated in brown sugar, and folded twice.
The cookies bake for about 20 minutes at 200 °C (400 °F) in a muffin pan or on a baking sheet. They pair well with afternoon coffee.

Instructions
Tip: tap a step to mark it as done.
Beat the butter and quark with a mixer until smooth and fluffy. Gradually add the flour and work into a soft dough. Refrigerate for at least 30 minutes to firm up.
Roll out the dough on a floured work surface and cut out rounds using a glass. Coat the rounds in brown sugar, fold in half, then fold in half again. Sprinkle brown sugar over the tops.
Bake the cookies in a greased muffin pan or on a baking sheet lined with parchment paper at 200 °C (400 °F) for about 20 minutes. Let cool slightly and serve.
Tip: Brown sugar melts and caramelizes during baking, so loosen the cookies from the baking sheet or muffin pan while they are still warm; they will stick if allowed to cool completely.
