This apricot bublanina, a Slovak fruit cake, has a marbled batter measured by the cup and is studded with canned apricots. While still warm, it is spread with mashed banana and topped first with vanilla pudding, then chocolate pudding, both made with the reserved apricot syrup diluted with water.

Use a 250 ml cup to measure the ingredients.

Instructions

Tip: tap a step to mark it as done.

  1. Mix the batter

Beat the eggs and sugar until foamy. Gradually add the oil, milk, rum, and both flours mixed with the baking powder and vanilla sugar.

  2. Marble the batter

Spread about two-thirds of the batter in a greased and floured baking pan. Stir the cocoa powder into the remaining batter and pour it over the batter in the pan.

  3. Bake with the apricots

Drain the apricots, reserving the syrup, and let the fruit drain well. Arrange the apricots over the batter and bake in an oven preheated to 180 °C (350 °F) for about 30–35 minutes.

  4. Add the banana

Spread the mashed banana over the cake while it is still warm. Add enough water to the reserved apricot syrup to make 1 l, then divide the liquid in half.

  5. Add the pudding layers

Use one half of the liquid to cook the vanilla pudding, sweeten to taste, and pour it over the cake while hot. Cook the chocolate pudding the same way and pour it on top. Let the cake set, then cut into pieces.

Tip: Mash the bananas with a fork just before spreading them, as they brown quickly when exposed to air. Spread a thin layer over the entire cake and start cooking the pudding immediately afterward; the hot topping will keep the bananas from darkening further.
