Banana tiramisu with vanilla pudding and mascarpone is a variation on the well-known Italian dessert for anyone who enjoys pudding-based creams. Vanilla pudding cooked with cane sugar is cooled and mixed with mascarpone, then layered with ladyfingers dipped in strong coffee with a splash of cream liqueur and sliced bananas. Cook the milk, sugar, pudding mix, and vanilla extract into a pudding. Let cool, then mix with the mascarpone.
Add a few drops of liqueur to the coffee. Dip the ladyfingers in the coffee and arrange them in the bottom of a deep-sided pan. Spread the cream over the ladyfingers and top with sliced bananas. Repeat the layers of ladyfingers, cream, and bananas until all the ingredients are used.
Dust the dessert with cocoa and refrigerate for several hours until set.
Tip: Briefly whisk the cooled pudding until smooth, then add the mascarpone a spoonful at a time to keep the cream from becoming lumpy.
