This protein tiramisu with skyr and quark layers ladyfingers briefly dipped in strong coffee with a thick cream of skyr, low-fat quark, and vanilla protein powder, finished with a dusting of cocoa. Unlike tiramisu with quark and sour cream, it contains no cream, mascarpone, or eggs, and the filling is sweetened with protein powder and honey. Let it rest for 30 minutes before serving so the ladyfingers soften.

Based on calculations from the ingredients, each serving has about 36 g of protein and 290 calories.

Instructions

Tip: tap a step to mark it as done.

  1. Brew the coffee

    10 min

Brew strong coffee, such as 2 shots of espresso topped up with water to make 120 ml, and let it cool in a shallow bowl.

  2. Mix the cream

    3 min

Whisk or beat the skyr, quark, protein powder, and honey until smooth, leaving no lumps of quark in the cream.

  3. Layer in glasses

    5 min

Break the ladyfingers in half and dip them in the coffee for a second on each side. Alternate layers of ladyfingers and cream in two glasses, starting with ladyfingers and finishing with cream.

  4. Chill

    30 min

Cover the glasses and refrigerate for at least 30 minutes, until the ladyfingers soften.

  5. Dust with cocoa

    1 min

Just before serving, dust the tops with cocoa powder through a fine-mesh sieve.

Tip: Dip the ladyfingers for just a second on each side; otherwise, they will fall apart and thin the cream. Let the coffee cool, as warm coffee would thin the cream.
