Cottage cheese chocolate mousse is a thick chocolate cream made from two tubs of cottage cheese blended until smooth with cocoa powder, melted dark chocolate, and honey. The curds disappear completely during blending, and the cream thickens like pudding in the refrigerator. Unlike chocolate mousse made with quark and yogurt, it contains no gelatin and is topped with raspberries.

Based on calculations from the ingredients, each serving has about 22 g of protein and 310 calories.

Instructions

Tip: tap a step to mark it as done.

  1. Melt the chocolate

    3 min

Break the chocolate into pieces and melt in the microwave in 20-second intervals or over steam. Let cool slightly until just lukewarm.

  2. Blend the cottage cheese

    3 min

Using an immersion blender, blend the cottage cheese with the cocoa powder, honey, and vanilla extract for at least 2 minutes, until completely smooth.

  3. Add the chocolate

    1 min

Pour in the lukewarm chocolate and blend briefly until evenly combined.

  4. Let thicken

    30 min

Divide the cream between two glasses or bowls and refrigerate for at least 30 minutes to thicken.

  5. Top with raspberries

    1 min

Top with raspberries just before serving.

Tip: Blend for at least 2 minutes until no lumps remain, keeping the immersion blender fully submerged. Add the chocolate only when lukewarm; hot chocolate would set into little grains in the cold cheese.
