Fluffy cocoa mousse with Baileys is a light dessert served in glasses that takes about 10 minutes to prepare, with no cooking or baking. The gelatin is softened in cold water, then dissolved in hot water. Sugar and cocoa powder are mixed with heavy whipping cream, then Baileys Irish cream liqueur, vanilla sugar, and the cooled gelatin are gradually added while whipping until stiff. Chill the glasses for at least an hour before serving. Serve it as a dessert for guests or as a sweet start to the main course.

Tip: tap a step to mark it as done.
Sprinkle the gelatin into a bowl of cold water and let stand for 1 minute. Pour in the boiling water, stir well, and let cool.
Mix the sugar with the cocoa powder and pour in the cream. While whipping, gradually add the Baileys, vanilla sugar, and gelatin mixture. Whip until the mousse holds stiff peaks.
Divide the mousse among serving glasses and refrigerate for at least 1 hour before serving.
Tip: Start pouring in the Baileys only once the cream begins to thicken, and keep both the cream and liqueur well chilled. Warm cream will not whip into a stiff mousse.
