Homemade marshmallows are fluffy candies made with gelatin, sugar, and water, flavored with vanilla. The gelatin is first left to bloom in half the cold water. The remaining water and granulated sugar are cooked into a syrup, then the two mixtures are combined and whipped until fluffy. The mixture sets in a small pan lined with parchment paper that has been oiled and dusted with powdered sugar. For colorful marshmallows, simply add a drop of food coloring.

Instructions

Tip: tap a step to mark it as done.

  1. Line a square pan measuring about 23 × 23 cm (9 × 9 inches) with parchment paper. Brush the paper with oil and dust with powdered sugar.
  2. Pour half the cold water into the bowl you will use for whipping and sprinkle in the powdered gelatin. Stir well and let bloom for about 10 minutes.
  3. Pour the remaining water into a small saucepan and add the granulated sugar. Stir and heat over medium heat until the sugar dissolves.
  4. Bring the syrup to a boil, stop stirring, and cook until it reaches 115°C (239°F). Do not cook the gelatin with the syrup; gelatin must not be boiled.
  5. Remove the saucepan from the heat and slowly pour the hot syrup in a thin stream into the bloomed gelatin while beating on low speed. Add the salt and vanilla extract, beat for about 2 more minutes on low speed, then beat on high for 10 to 15 minutes, until the mixture turns white and thickens considerably.
  6. Spread the mixture in the prepared pan and let set for about 3 hours. Since it is very sticky, use an oiled spatula to help spread it.
  7. Lightly dust the top with powdered sugar and cut into cubes.

Tip: Cut into cubes using an oiled knife or scissors, and immediately coat each piece in powdered sugar to keep them from sticking together.
