This strawberry gelatin dessert with lemon is a fruity treat made with four ingredients, much like homemade jelly squares. Blended strawberries are warmed with gelatin, sugar, and lemon juice. Once cooled, the mixture is whipped for several minutes until thick and pale. After five to six hours in the refrigerator, simply cut it into squares and coat in powdered sugar.

Instructions

Tip: tap a step to mark it as done.

  1. Blend the strawberries until completely smooth, stir in the gelatin, and let it bloom briefly. Then add the sugar and lemon juice.

  2. Stir the mixture and heat until the gelatin dissolves, but do not let it boil. Let cool, then beat for 5–6 minutes until thick and pale. Transfer to a pan lined with parchment paper and refrigerate for 5–6 hours until set.

  3. Cut the set dessert into squares, dust with powdered sugar, and serve.

Tip: Start whipping only when the cooled mixture has thickened and runs off a spoon like thick syrup—this is when it will increase most in volume and become paler. If it sets before you start, warm it briefly and let it cool again.
