These no-bake strawberry bars have three layers: butter cookies, strawberries, and white chocolate mousse made with gelatin, sour cream, and whipped cream. Pour the mousse over the strawberries while it is still liquid, then refrigerate the bars overnight. Work quickly, as the mousse starts to set within a few minutes. Thick, creamy yogurt can be used instead of sour cream.

Instructions

Tip: tap a step to mark it as done.

  1. Bloom the gelatin

Pour 100 ml cold water over the gelatin and let it bloom for at least 30 minutes.

  2. Layer the cookies and strawberries

Line the bottom of a small baking pan or dish, about 20 × 30 cm, with parchment paper. Arrange the cookies snugly side by side on the paper. Wash and hull the strawberries, cut the larger ones in half, and arrange them over the cookies.

  3. Make the mousse

Whip the heavy cream to stiff peaks and refrigerate. Melt the chocolate in a bowl set over steaming water. Gently heat the bloomed gelatin until liquid (do not let it boil), then beat it into the warm chocolate with an electric mixer. Mix in the sour cream, powdered sugar to taste, and finally the whipped cream. Beat briefly until smooth.

  4. Chill until set

Immediately pour the mousse over the strawberries and smooth the top. Refrigerate overnight until set, then cut into bars with a sharp knife.

Tip: Let the sour cream come to room temperature before you begin; cold sour cream would cause the chocolate and gelatin mixture to form lumps.
