This no-bake sour cream cake with fruit and butter cookies is made in an ordinary salad bowl lined with plastic wrap. Sour cream is mixed with powdered sugar and dissolved gelatin, then combined with broken butter cookies and chopped fruit, such as strawberries, grapes, orange, and bananas. The mixture is smoothed into the bowl and chilled for several hours until set. The cake is then unmolded with the help of the plastic wrap, decorated with kiwi slices, and cut with a sharp knife. The hands-on preparation takes just a few minutes.

Instructions

- Line a large salad bowl with plastic wrap. Prepare the gelatin according to the package directions. In another bowl, mix the sour cream with the powdered sugar, then stir in the dissolved gelatin. Break the butter cookies into large pieces.
- There is no need to process the cookies into smaller pieces. Cut the strawberries, grapes, peeled orange, and bananas into small pieces, then fold them into the sour cream mixture along with the cookies. Do not add the kiwi to the mixture: raw kiwi contains an enzyme that prevents gelatin from setting. Spread the mixture into the lined bowl and smooth the top.
- Refrigerate the cake for several hours until set, then unmold it using the plastic wrap to help release it from the bowl. Peel and slice the kiwi, then arrange the slices on top of the cake. Cut with a sharp knife and serve.
Tip: First temper the dissolved gelatin with two tablespoons of the sour cream mixture, then stir it into the rest. Otherwise, it could set into strands in the cold sour cream.
