Kiwi cake squares with cream filling are a summer dessert with a cocoa cake base and a refreshing fruit layer. Spread the baked cake with a filling made from whipped cream, sour cream, sugar, and lemon juice, then arrange kiwi slices on top. Spoon slightly cooled gelatin cooked with water and sugar over the fruit. The kiwi gives the cake a pleasantly tart flavor, and preparation takes no more than half an hour, not counting chilling.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the sugar with the egg yolks and butter. Beat the egg whites until stiff, then gently fold them into the mixture. Add the flour, baking powder, and cocoa powder. Pour the batter into a pan lined with parchment paper and bake at 180 °C (350 °F) for about 20 minutes.

  2. Whip the heavy cream, then fold in the sour cream, sugar, and lemon juice. Spread the filling over the cooled cake and arrange kiwi slices on top.

  3. Stir the gelatin into 250–300 ml water with 2 tbsp sugar. Bring to a boil and cook for a few more minutes, then let cool slightly and spoon over the cake.

  4. Refrigerate the cake for at least 1 hour to set before serving.

Tip: For the topping, use a cake glaze mix that is cooked with water and sugar. Regular gelatin will not set over fresh kiwi because the fruit contains an enzyme that breaks it down.
