Krtkove rezy are a sheet-pan version of Slovak mole cake, named for its crumb-covered appearance: scrape the top layer off a baked cocoa cake, then cover the base with halved bananas and a filling of sour cream, quark (soft curd cheese), and whipped cream with grated dark and white chocolate. Sprinkle the reserved cake crumbs over the top.

Chill the cake until set, preferably overnight, and cut it with a wet knife.

Instructions

Tip: tap a step to mark it as done.

  1. Bake the cake

Beat the egg yolks with the powdered sugar until light and fluffy, then gradually pour in the oil and milk. Mix the flour with the cocoa powder and baking powder, then add to the yolk mixture. Beat the egg whites until stiff and gently fold them into the batter. Pour the batter into a large sheet pan that has been greased and dusted with coarse wheat flour. Bake at 170°C (340°F) for about 20 minutes, depending on your oven. Let cool completely.

  2. Hollow out the cake

Lightly score the top layer of the cake with a knife, then carefully scrape it off with a spoon into a bowl. Halve the bananas lengthwise and arrange them cut side down on the cake base.

  3. Make the filling

Mix the sour cream with the quark, powdered sugar, vanilla sugar, and vanilla extract. Whip the heavy cream with the whipped cream stabilizer, then gently fold it into the quark mixture. Coarsely grate both chocolates to leave larger flakes, then fold them into the filling.

  4. Finish the cake

Spread the filling over the bananas and smooth the top. Crumble the reserved cake scraps and sprinkle them over the filling, pressing them down gently. Refrigerate the cake, preferably overnight. Cut with a wet knife, wiping it clean after each cut.

Tip: When scraping off the top, leave the cake base at least 1 centimeter thick; a thinner base would become soggy under the bananas and cream and tear when sliced.
