This banana-coffee cake has a cocoa sponge base and three layers of cream made with spreadable butter, quark (a fresh farmer's cheese), and whipped cream, with banana slices and ladyfingers dipped in cold coffee between them. The top is sprinkled with grated chocolate, and the flavors meld during four hours in the refrigerator.

Instructions

Tip: tap a step to mark it as done.

  1. Cocoa sponge cake

Beat the egg whites with the sugar and a pinch of salt until stiff peaks form. With the mixer running, gradually add the egg yolks, hot water, and oil. Finally, fold in the flour, baking powder, and cocoa powder. Pour the batter into a greased and floured baking pan and bake in an oven preheated to 180 °C (350 °F) for about 20 minutes. Let cool.

  2. Cream filling

Whip the heavy cream. In another bowl, mix the spreadable butter with the powdered sugar, vanilla sugar, and quark until smooth. Gently fold in the whipped cream.

  3. Bananas

Spread one-third of the cream filling over the cooled sponge cake and arrange banana slices close together on top. Cover with another third of the cream filling.

  4. Coffee-dipped ladyfingers

Briefly dip the ladyfingers in the cold coffee and arrange them over the cream filling. Spread the remaining cream filling on top and sprinkle with grated chocolate.

  5. Chill until set

Refrigerate the cake for at least 4 hours to let the flavors meld, then cut into squares.

Tip: Arrange the banana slices close together and cover them with cream right away so they do not brown from exposure to air. Dip the ladyfingers in the coffee only briefly, or they will fall apart.
