These cream-based turnovers go straight into the oven after shaping: the dough, made with heavy whipping cream, butter, egg yolks, and yeast, is not left to rise, just rolled out and cut into squares. The filling combines smooth quark (a soft curd cheese), an egg yolk, vanilla pudding mix, rum, and dried cranberries. The hot turnovers are drizzled with rum and dusted with powdered sugar.

Instructions

Tip: tap a step to mark it as done.

  1. Dough

Crumble the yeast into a bowl, sprinkle with the sugar, pour in the lukewarm milk, and stir. Immediately add the cream, egg yolks, both flours, salt, and softened butter. Mix with a wooden spoon, then knead by hand on a work surface until smooth.

  2. Filling

Mix the quark with the egg yolk, pudding mix, vanilla sugar, powdered sugar, and rum until smooth, then stir in the cranberries.

  3. Shape the turnovers

Immediately roll out the dough to about 3 mm thick and cut into squares about 8 cm on each side. Place a tablespoon of filling in the center of each square, fold diagonally into a triangle, and press the edges together firmly. Arrange the turnovers on a baking sheet lined with parchment paper.

  4. Bake

Without letting them rise, immediately bake in an oven preheated to 170°C (340°F) for about 20 minutes, until golden. Drizzle with rum while hot and dust with powdered sugar.

Tip: Work with the dough right away and bake the turnovers while still cold so the butter creates delicate layers during baking. Press the edges together firmly so they do not open.
