Marokánky are thin, crisp Slovak cookies made with nuts, dried fruit and oats, held together by a thick mixture of milk, butter, maple syrup and flour. Chopped peanuts and almonds, raisins and cranberries are added to the mixture, but you can vary the combination as you like. The finished cookies are coated with nougat chocolate. Tied with a ribbon, they make a lovely homemade gift.

Instructions

Tip: tap a step to mark it as done.

  1. Heat the milk, butter and maple syrup in a large saucepan. Remove the hot milk mixture from the heat and whisk in the flour.

  2. Chop the peanuts and almonds in a food processor, then mix with the raisins, cranberries and oats.

  3. Add the nut and oat mixture to the thickened milk mixture all at once. Stir to combine and let cool.

  4. Adjust the sweetness or flavor as needed. The mixture should be thick but easy to spread, neither runny nor too stiff.

  5. Line baking sheets with parchment paper. Spoon mounds of the mixture onto the sheets, using as much as you need for your desired cookie size. Flatten and spread each mound evenly with a spatula.

  6. Leave at least 1 centimeter between the cookies.

  7. Place the baking sheets in the oven and bake at 190°C (375°F) until the bottoms of the cookies begin to caramelize, about 15–20 minutes.

  8. The tops may still look runny, but the cookies will firm up as they cool after you take them out of the oven.

  9. Carefully peel the cooled cookies off the parchment paper, turn them bottom-side up and spread with a thick coating of chocolate. Let the chocolate set, then package the cookies.

Tip: If the cooled cookies stick to the parchment paper, return them briefly to a warm oven so the caramel softens and releases.
