These buckwheat brownies are made with dark chocolate melted with butter, honey, eggs and buckwheat flour, with toasted walnuts, dried cranberries, raisins and grated apple mixed in. They are topped with a cream made from whipped cream, mascarpone, chia seeds and lime juice.

Buckwheat flour is naturally gluten-free. If you follow a gluten-free diet, choose chocolate and baking powder labeled gluten-free as well.

Instructions

  1. Prepare the ingredients

Preheat the oven to 180 °C (350 °F). Melt the chocolate and butter together in a double boiler. Chop the walnuts and toast them in a dry skillet. Grate the apple.

  2. Mix the batter

Stir the honey into the chocolate, then gradually beat in the eggs. Add the walnuts, cranberries, raisins and apple, followed by the buckwheat flour mixed with the baking powder. Finally, stir in the cinnamon.

  3. Bake

Pour the batter into a pan about 20 × 30 cm lined with parchment paper and bake for 20 minutes. The center should stay moist. Let cool.

  4. Spread with chia cream

Whip the cream until stiff peaks form, then add the mascarpone, chia seeds and lime juice and beat briefly to combine. Spread the cream over the cooled brownies and refrigerate for about an hour to allow the chia seeds to swell.

Tip: Let the melted chocolate and butter cool to lukewarm before beating in the eggs, as hot chocolate would cause them to curdle. Slice the brownies straight from the refrigerator so the cream and moist center do not smear.
