Cinnamon chia pudding with caramelized pecans requires no cooking for the pudding itself—just stir chia seeds and rolled oats into milk with cinnamon and honey. The mixture thickens in 10–15 minutes. Meanwhile, briefly soak the pecans in hot water, coat them in cane sugar, and caramelize them in coconut oil. Topped with crunchy pecans and a dusting of cinnamon, this pudding works for breakfast or dessert.

Instructions
Tip: tap a step to mark it as done.
Stir the chia seeds, rolled oats, cinnamon, and honey into the milk and let stand for about 10–15 minutes to thicken.
While the pudding thickens, prepare the pecans. Pour hot water over them and let soak for 3–5 minutes. Drain, let dry slightly, and coat in the sugar.
Heat the coconut oil in a skillet and caramelize the pecans in it. Dust with ground cinnamon at the end, if desired.
Spoon the pudding into glasses and top with the caramelized pecans.
Tip: Stir the pudding again after five minutes to keep the seeds from clumping. Spread the caramelized pecans on a plate without letting them touch, or they will stick together as they cool.
