This peach quark and sour cream tart is baked in a springform pan with a thin crust made from flour, melted butter, and a little water. The crust is first baked on its own for 10 minutes, then filled with a creamy mixture of smooth quark (soft curd cheese), sour cream, eggs, and cornstarch, flavored with vanilla sugar and lemon zest, and topped with canned peaches. This tart is a lovely choice for guests or a small celebration on warm days when you want something sweet and fruity.

Instructions

Tip: tap a step to mark it as done.

  1. Melt the butter, mix it with the flour and salt, add the water, and knead into a dough. Let rest in the refrigerator for about 20 minutes.

  2. In a deep bowl, use a hand mixer to thoroughly combine the quark, eggs, sugar, cornstarch, lemon zest, vanilla sugar, and sour cream.

  3. Line a springform pan with parchment paper, then press the dough into the pan, covering the bottom and sides. Prick the dough in several places with a fork to allow moisture to escape. Bake the crust without the filling in an oven preheated to 180°C (350°F) for about 10 minutes.

  4. Remove the prebaked crust from the oven and pour in the quark and sour cream filling. Arrange the peaches on top and press them into the filling so that only their tops remain exposed.

Reduce the oven temperature to 170°C (340°F) and bake the tart for another 40 minutes.

  5. Let the baked tart cool, dust with powdered sugar, and serve.

Tip: After pouring in the filling, gently tap the pan on the counter to bring air bubbles to the surface. The tart is done when the filling is set around the edges but still jiggles slightly in the center when shaken.
