These peach and quark bars have a tender, buttery base, a layer of quark mixed with eggs and vanilla sugar, peach wedges, and a crunchy crumb topping. Quark, a fresh cheese similar to farmer's cheese, bakes into a creamy filling while the peaches release their juices. Both fresh and canned peaches work well.

Crumb topping and dough
15 minPreheat the oven to 180 °C (350 °F). Rub the flour, sugar, and baking powder together with the cold butter until crumbly, then set aside one-third of the mixture. Add the egg to the remaining mixture, quickly work it into a dough, and press it into a baking pan about 25 × 35 cm lined with parchment paper.
Quark filling
5 minMix the quark with the eggs, sugar, and vanilla sugar, then spread over the dough.
Peaches
5 minPit the peaches, cut them into wedges, and arrange them over the quark filling. Sprinkle with the reserved crumb topping.
Bake
40 minBake for 35–40 minutes until golden. Let cool, then cut into squares.
Tip: Drain canned peaches well on a paper towel before using them, as their juice would thin the quark filling.
