This blueberry and quark cake has three layers: a simple batter measured in cups, sweet quark (farmer's cheese) mixed with egg and vanilla, and blueberries on top. The quark turns creamy as it bakes, and the blueberries release their juices.

Instructions

Tip: tap a step to mark it as done.

  1. Batter

    10 min

Preheat the oven to 180 °C (350 °F). Grease and flour a baking pan about 25 × 35 cm. Beat the eggs with the sugar, pour in the oil and milk, and stir in the flour and baking powder. Pour the batter into the pan.

  2. Quark layer

    5 min

Mix the quark with the egg, sugar, and vanilla sugar until smooth, then use a spoon to spread it over the batter.

  3. Blueberries

    2 min

Scatter the blueberries evenly over the top.

  4. Bake

    40 min

Bake for 35–40 minutes, until the quark layer is set and the edges of the cake are golden. Let cool before slicing.

Tip: Wait until the cake has cooled before slicing so the quark layer can set. If sliced while warm, the filling will run.
