This no-bake cake with a cookie crust, fruit, and pudding has four layers and requires no oven. Press a base of cookie crumbs and butter into a 20 × 30 cm pan, then add a fruit layer made from semolina cooked with water and sugar and mixed with canned fruit. A buttery vanilla pudding layer follows, topped with whipped cream.
The cake needs to chill between layers, so start making it ahead of time. Choose whichever canned fruit you prefer.

Crust
Mix the cookie crumbs with the butter and press into a 20 × 30 cm pan. Refrigerate the crust while you prepare the layers.
Fruit layer
Cook the water, sugar, vanilla sugar, and semolina until the mixture thickens. Add the canned fruit and cook for a few more minutes. Carefully spread the fruit mixture over the chilled crust and return to the refrigerator.
Pudding layer
Cook the pudding using the milk and pudding mix, cover with plastic wrap, and let cool completely. Beat the butter with the powdered sugar, mix into the pudding, and spread over the fruit layer.
Whip the cream and spread it over the top. Refrigerate the cake for at least two hours.
Tip: Drain the canned fruit and replace some of the water for the semolina with the syrup for a more pronounced fruit flavor. Use a little less sugar, since the syrup is sweet.
