This flourless, no-bake strawberry quark cake has a quark layer set with gelatin and a strawberry gelatin topping. Smooth quark, a soft curd cheese, is mixed with butter, vanilla sugar, and an egg yolk, then combined with unflavored gelatin and spread in a round pan. Fresh or canned strawberries go on top, followed, after an hour in the refrigerator, by a layer of pureed strawberries mixed with strawberry gelatin. The cake then sets overnight, so make it a day ahead.

Instructions
Tip: tap a step to mark it as done.
- Prepare a round pan for setting the cake. In a bowl, beat the butter with the vanilla sugar and egg yolk. Add the unflavored gelatin prepared according to the package directions, then add the quark. Spread the quark mixture in the pan, arrange fresh or canned strawberries on top, and refrigerate for 1 hour.
- Meanwhile, blend the strawberries into a puree. In a saucepan, combine the strawberry gelatin dessert mix with the water. Once prepared, stir it into the strawberry puree. Pour the mixture over the quark layer and refrigerate overnight until set.
- Serve the cake once set.
Tip: Stand the halved strawberries with their cut sides snug against the edge of the pan to create a pretty pattern around the sides when the cake is unmolded.
