Raspberry kefir gelatin squares with cinnamon are a simple sweet treat made with fresh raspberries, kefir, and gelatin. The raspberries are cooked over low heat and mashed into a smooth sauce, then bloomed gelatin is dissolved in the gently warmed mixture. It is flavored with vanilla extract and a pinch of cinnamon, combined with kefir, and left to set in a pan. Once set, the gelatin is cut into squares to serve as a fruit dessert or a snack for children.

Instructions
Tip: tap a step to mark it as done.
Let the gelatin bloom in the water.
Place the raspberries in a saucepan and heat over low heat, stirring constantly, until they form a thick sauce. Mash them with a spoon to make the mixture as smooth as possible.
Stir the gelatin and its soaking water into the raspberries, and stir until dissolved. Do not let the mixture get too hot; gentle warmth is enough to dissolve the gelatin.
Remove the mixture from the heat and stir in the kefir until well combined.
Pour the mixture into a baking pan lined with parchment paper or into silicone molds, and refrigerate until set.
Tip: If you prefer not to have raspberry seeds, press the mashed raspberries through a sieve before adding the gelatin for smooth squares.
