Fried kefir donuts with powdered sugar are sweet treats that need no waiting for yeast dough to rise. Instead of yeast, baking soda reacts with the kefir to leaven the dough. The dough, made with kefir, egg, sugar, oil, and all-purpose flour, is easier to mix by hand so you can judge its consistency. The donuts are fried in oil and dusted with powdered sugar while still warm. Serve them with afternoon coffee or tea.

  7. Heat plenty of oil in a skillet and fry the donuts on both sides until golden brown.

Let them cool slightly, then dust with powdered sugar.

Tip: Lightly flour the work surface and brush excess flour off the donuts before adding them to the oil; otherwise, the flour will burn and darken the oil.
