Thick sour cream and sweetened condensed milk filling is a quick, no-cook filling for cakes and Christmas cookies. All you need is thick sour cream, sweetened condensed milk, a tablespoon of lemon juice, and vanilla sugar. The acid in the sour cream and lemon juice thickens the filling, so no butter or gelatin is needed. Whip it up in 5 minutes, then refrigerate for 2 hours until it is firm enough to spread.

Instructions

Tip: tap a step to mark it as done.

  1. Whip the filling

    5 min

Place the chilled sour cream and vanilla sugar in a bowl and beat for 1 minute. Gradually pour in the sweetened condensed milk and beat for about 3 more minutes, until the filling thickens. Add the lemon juice and beat briefly to combine. The filling should fall from the whisk in thick ribbons.

  2. Chill until set

    2 hr

Cover the bowl and refrigerate for at least 2 hours. The filling will thicken further as it chills and become spreadable.

  3. Use the filling

Use the filling between cake layers, in other cakes, or to sandwich Christmas cookies together, or serve it in glasses with fruit. Store in a sealed container in the refrigerator for up to 3 days.

Tip: Thin, low-fat sour cream will not thicken the filling well, so choose a thick sour cream; for cake bars that need to hold their shape when sliced, mix in 100 g softened butter at the end. For a different flavor, add a tablespoon of cocoa powder or rum, or some grated lemon zest. Read more: How to adjust a recipe for your baking pan
