This mascarpone frosting takes just two ingredients: chilled mascarpone and a can of sweetened condensed milk. Whisk them together until smooth, then let the frosting firm up briefly in the refrigerator. It contains no butter, so it is not as heavy as buttercream, and the mascarpone helps it hold its shape. Use it to decorate cupcakes, fill and frost cakes, or layer in dessert glasses with fruit.

You can also make mascarpone at home from cream and lemon juice.

Instructions

Tip: tap a step to mark it as done.

  1. Mix

Place the chilled mascarpone in a bowl and gradually pour in the condensed milk, stirring constantly with a whisk. Mix just until the frosting is smooth and uniform.

  2. Chill

Cover the frosting and refrigerate for 30 minutes to firm up.

  3. Decorate

Transfer the chilled frosting to a piping bag fitted with a tip and use it to decorate cupcakes or a cake. The warmth of your hands will warm the frosting slightly in the bag, making it easier to pipe.

Tip: Do not beat the frosting with a mixer on high speed, as the mascarpone could turn grainy. A full batch is enough to fill and frost a 24 cm cake or decorate 24 cupcakes.
