Dunajské vlny, or Danube waves cake, is made with a creamed batter: spread a cocoa layer over a light layer, then press in canned apricot halves to create waves as the cake bakes. The buttercream is made with Zlatý klas, a Slovak custard powder, cooked in the juice from the canned fruit and beaten with butter and sugar. Chocolate tops the cake, and the slices reveal waves of light and dark cake with fruit.

Instructions

Tip: tap a step to mark it as done.

  1. Make the batter

Cream the margarine with the powdered sugar, then beat in the egg yolks one at a time. Beat the egg whites until stiff peaks form. Fold the flour mixed with the baking powder into the creamed mixture, alternating with the beaten egg whites.

  2. Make two layers

Spread half the batter in a greased and floured baking pan. Stir the cocoa powder and 3 tbsp of juice from the canned fruit into the remaining batter, then spread it over the light batter. Arrange the drained apricot halves on top, cut side up, cutting any large halves into smaller pieces.

  3. Bake

Bake in an oven preheated to 210°C (410°F) for about 20 minutes. Let cool.

  4. Make the buttercream

Stir the pudding mix into the juice from the canned fruit (about 500 ml), then cook, stirring constantly, until thick. Let cool. Cream the butter with the powdered sugar, then gradually beat in the pudding until smooth.

  5. Finish

Spread the buttercream over the cooled cake, then pour melted chocolate over the top or sprinkle with grated chocolate.

Tip: Drain the apricots well before placing them on the batter, or the cake around them will not bake through. Let the pudding cool completely, then beat it into the butter a spoonful at a time.
