Peaches canned in caramel syrup with rum have a more pronounced flavor than peaches in plain sugar syrup. First, caramelize part of the sugar, add boiling water and the remaining sugar, and cook to make a syrup. Put a teaspoon of Pektogel (a pectin gelling agent) and three tablespoons of rum in the bottom of each jar, then add peeled, sliced peaches and cover with lukewarm syrup.

Process the jars for 40 minutes at 80°C (176°F). This recipe uses four kilograms of peaches.

Instructions

Tip: tap a step to mark it as done.

  1. Pour 750 g of sugar into a large pot and let it caramelize over low heat, stirring with a wooden spoon once it starts to melt. Pour boiling water into the liquid caramel, add the remaining sugar, and cook until the sugar dissolves.

  2. Put a teaspoon of Pektogel and 3 tablespoons of rum in the bottom of each jar, then pack in the peeled, sliced peaches. Can only yellow-fleshed peaches; according to the U.S. National Center for Home Food Preservation (NCHFP), white-fleshed peaches may be too low in acid, so freeze those instead.

  3. Cover the peaches in the jars with lukewarm caramel syrup and process for 40 minutes at 80°C (176°F).

Tip: Add the boiling water to the caramel carefully, a little at a time, as the mixture will splatter vigorously and the steam can burn you. Any caramel that hardens into lumps will dissolve as it continues to cook.
