Acacia syrup is made by pouring a boiled sugar solution with lemon over fresh acacia flowers (black locust blossoms) and letting them steep. For half a liter of flowers, use half a liter of water, the same volume of sugar, and half a lemon. After 24 hours, strain the syrup and pour it into bottles. For a prettier color, simply let the flowers stand in water without boiling. You can use the same method to make elderflower, lilac, or lavender syrup.

Instructions
Tip: tap a step to mark it as done.
Bring the water and sugar to a boil and boil for 10 minutes. Remove from the heat, pour in the lemon juice, and add the lemon peel as well. Add the acacia flowers, stripped from their stems, and let stand for 24 hours. Strain the syrup and pour it into bottles.
Tip: For a syrup with a color as pretty as the one pictured, do not boil the mixture; simply let it stand in water.
Tip: Add a few drops of lemon juice to your glass to enhance the syrup's flavor.
Tip: Gather the flowers in dry weather, far from roads, and do not wash them—just shake them to remove any insects. Washing would rinse away some of their fragrance.
