This homemade beet and fruit syrup with citric acid starts with the cooking liquid from 2 kg of red beets. The beets are boiled in water for 1.5 to 2 hours, then strained. The liquid is brought to a boil with sugar, citric acid, and pureed fruit of your choice. The hot syrup is poured into bottles, which are sealed tightly, wrapped in a blanket, and left to cool until the next day. Dilute it with water like any fruit syrup for the whole family to enjoy.

Instructions

Tip: tap a step to mark it as done.

  1. Place the beets in a pot, cover with the water, and boil for approximately 1.5 to 2 hours.
  2. Strain the cooking liquid and add the sugar, citric acid, and thoroughly pureed fruit to it. Stir well and bring to a boil.
  3. Pour the syrup into prepared bottles while still hot and seal tightly. Wrap the bottles in a blanket and let them cool until the next day.
  4. Store the bottles in a dark place and use the syrup as needed.

Tip: Beets stain heavily, so wear gloves when handling them. Use a funnel to pour the hot syrup into bottles set on a kitchen towel, as a cold surface could cause the glass to crack.
