This jam can be made with any fruit, using equal amounts of fruit and sugar, plus lemon juice. Let the sugar-covered fruit sit overnight in a cool place to release its juices. The next day, bring the mixture to a boil, add the lemon juice, and boil for just five more minutes. No preservatives or lengthy cooking are needed. Pour the hot jam into jars, seal, and let cool upside down, wrapped in a kitchen towel.

Instructions

Tip: tap a step to mark it as done.

  1. Wash the fruit and remove the pits if using sweet cherries, sour cherries, or apricots. Place in a bowl, cover with the sugar, and let sit overnight in a cool place.
  2. The next morning, place the mixture on the stove and cook. Once it comes to a boil, add the lemon juice and boil for another 5 minutes.
  3. Pour the hot jam into jars and seal with lids. Turn the jars upside down, wrap in a kitchen towel, and let cool for several hours.
  4. Store the jam prepared this way for a long time. These quantities yield approximately 1 liter.

Tip: Skim off any foam that forms during boiling with a spoon so the jam stays clear in the jars. Test the consistency by placing a drop on a cold plate—it should not run once cool.
