Chikhirtma is a traditional Georgian soup most often made with chicken. It starts with chicken broth flavored with bay leaf and pepper, to which sautéed onion is added. Egg yolks mixed with wine vinegar give the soup a slightly tangy flavor and thicken it as they are gradually poured into the hot broth, stirring constantly. Finally, the chopped chicken is returned to the soup, and cilantro is sprinkled on top. Serve it for lunch or dinner.

Instructions
Tip: tap a step to mark it as done.
First, cook the chicken to make the broth. Half an hour before the end of cooking, add herbs to taste, the bay leaf, and pepper.
Remove the cooked chicken and cut it into pieces.
Chop the onion, sauté it lightly, then add it to the broth and cook for another 5–10 minutes.
Mix the egg yolks with the vinegar and gradually pour them into the broth, stirring constantly.
Return the chopped chicken to the soup, bring it to a boil, and finish with a sprinkle of cilantro.
Tip: First, stir a ladleful of hot broth into the egg yolks and vinegar a tablespoon at a time, then pour the mixture into the pot, stirring constantly. This warms the yolks gradually so they do not curdle.
