This cold cucumber soup with sour cream and dill is a blended soup for hot days when you don't want to stand over the stove. Peeled cucumbers are blended with red onion, garlic, dill, parsley, sour cream, lemon juice, and olive oil. If the soup is too thick, thin it with a little water. Similar soups are common in Mediterranean cooking and make good use of a summer cucumber harvest.

Instructions

Tip: tap a step to mark it as done.

  1. Peel the cucumbers and cut them into small cubes. Cut the onion into small dice or strips, then add the crushed garlic, finely chopped dill, and parsley.

  2. Pour in the lemon juice and olive oil, add the cilantro, pepper, and salt, and finally add the sour cream.

  3. Blend everything in a blender. If the soup is too thick, thin it with a little water.

  4. Chill the soup in the refrigerator for about 2 hours, then serve.

  5. Before serving, sprinkle with fresh green onion or garnish with a spoonful of sour cream, if desired.

Tip: Taste each cucumber at both ends, as a single bitter one will spoil the whole soup. Chilled soup tastes less strongly seasoned, so taste it again before serving and add more salt if needed.
