Greek tzatziki is a thick, cold sauce made with yogurt and grated cucumbers; this version adds toasted caraway seeds, dill, cilantro, and green onion. Similar yogurt sauces are also found in Turkey, Iraq, and India, and the Greek version was reportedly originally called mittico. Simply toast the caraway seeds in a dry skillet for two minutes, then peel and coarsely grate the cucumbers. Adjust the amount of garlic to taste.

Instructions

Tip: tap a step to mark it as done.

  1. Lightly toast the caraway seeds in a dry skillet for two minutes, then transfer them to a deep bowl.
  2. Rinse the herbs—3 sprigs of cilantro and dill—and one green onion stalk, then chop them as finely as possible. Add them to the toasted caraway seeds.
  3. Peel the cucumbers, coarsely grate them, and add them to the bowl. Add crushed garlic to taste, using as many cloves as you prefer.

  4. Add the yogurt and salt and stir everything together. Serve the tzatziki immediately; do not leave it at room temperature for long.

Tip: Lightly crush the toasted caraway seeds in a mortar or with a rolling pin on a cutting board before adding them to release more of their aroma. Pat the dill and cilantro dry after rinsing so they do not stick to the knife when chopping.
