This creamy mushroom sauce features fresh mushrooms simmered with butter and onion and finished with cream and dill. Button mushrooms or wild mushrooms, such as porcini or birch boletes, work well, making this a popular meatless fall lunch.

Serve it with Slovak steamed yeast dumplings or boiled potatoes.

Instructions

Tip: tap a step to mark it as done.

  1. Clean the mushrooms

Clean the mushrooms with a knife and wipe them with a damp cloth; do not soak them in water. Slice the mushrooms and finely chop the onion.

  2. Cook the mushrooms

    10 min

Sauté the onion in the butter until softened. Add the mushrooms and cook for 8–10 minutes, until they release their liquid and most of it evaporates.

  3. Thicken the sauce

    10 min

Sprinkle the mushrooms with the flour and stir briefly. Dissolve the bouillon in the water and pour it in. Whisk to combine and cook for 10 minutes.

  4. Add the cream

    5 min

Pour in the cream and simmer for 5 minutes, until the sauce thickens. Season with salt and pepper and stir in the dill.

  5. Serve

Serve the mushroom sauce warm with Slovak steamed yeast dumplings or boiled potatoes.

Tip: Do not wash the mushrooms in water before cooking—they will absorb it and make the sauce thin. Simply clean them with a knife and wipe them with a damp cloth.
