Beef with tomato sauce, known in Czechia as rajská, features a sweet-and-sour sauce made with a butter roux, tomato paste, and beef broth. The beef simmers for about two hours with root vegetables and spices, and the resulting broth is used to make the sauce.
Serve with sliced beef and yeast-raised bread dumplings.

Cook the beef
2 hrPlace the beef in 1.5 l of cold water and bring to a boil. Skim off the foam. Peel and trim the carrot, parsley root, celery root, and onion, cut into large pieces, and add to the pot along with the bay leaves, allspice, black peppercorns, and salt. Cover and simmer over low heat for about 2 hours, until the beef is tender.
Strain the broth
Remove the beef and keep it warm. Strain the broth and measure out 500 ml for the sauce. Reserve the rest for soup.
Make the roux
Melt the butter in a saucepan, stir in the flour, and cook, stirring constantly, until light golden. Add the tomato paste and cook together for 1–2 minutes.
Cook the sauce
15 minGradually pour in the hot broth, whisking until smooth. Add the sugar and simmer over low heat for 15 minutes, stirring occasionally. Season with salt and sugar to achieve a sweet-and-sour flavor. If the sauce is too thick, add a little more broth.
Serve
Slice the beef across the grain, spoon the sauce over it, and serve with yeast-raised bread dumplings.
Tip: Use the remaining broth to make soup—just cook noodles or vegetables in it for another lunch.
