Frozen pea soup with mint and sour cream is a quick vegetable soup with an unexpected freshness from a few mint leaves. First, diced potatoes are cooked in salted water, then onion sautéed in butter and frozen peas are added. Finally, the soup is finished with sour cream, flavored with pressed garlic and chopped mint, and briefly brought to a boil. This recipe serves four.

Instructions
Tip: tap a step to mark it as done.
- Bring the water to a boil in a pot, add the diced potatoes, and cook for about 10 minutes. Melt the butter in a skillet and sauté the onion until golden. Add the onion and peas to the pot, season the soup with salt, and simmer for about 10 minutes.
- Stir in the sour cream, then add the pressed garlic and finely chopped mint. Bring to a boil and remove from the heat.
Tip: Chop the mint just before adding it so it doesn't darken, and start with a smaller amount—too much would overpower the delicate sweetness of the peas.
