Asparagus spread with eggs and mint is a delicate spring spread made with green asparagus, eggs, and butter, flavored with mustard and lemon juice. Steam the asparagus and eggs together for 6 minutes, or boil them in water, then blend with the remaining ingredients. Green asparagus does not need peeling; just trim off the woody ends. Only white asparagus needs peeling. For a sharper flavor, add a crushed clove of garlic to the spread.

Instructions
Tip: tap a step to mark it as done.
Take the butter out of the refrigerator and cut off the amount needed so it can soften.
Trim the woody ends off the asparagus. Place the asparagus and eggs in a steamer and steam for 6 minutes. If you do not have a steamer, boil them in water. Set the cooked asparagus aside and peel the eggs so they can cool.
Cut the asparagus and eggs in half and place in a food processor fitted with an S-blade. Add the remaining ingredients, blend into a spread, and adjust the seasoning as needed.
Tip: To find where the woody part ends, bend the stalk; it will snap at the right spot. Use the snapped-off ends in stock or soup.
