Beer can chicken roasts upright on a can or roasting stand filled with beer: the steam keeps it juicy inside while the skin turns golden brown. Before roasting, coat it with yogurt mixed with crushed garlic, salt, and pepper. Roast for 1 to 1.5 hours at 180–200 °C (350–400 °F), adding water to the pan or roasting potatoes around the chicken.

Instructions

Tip: tap a step to mark it as done.

  1. Preparation

Preheat the oven to 180 °C (350 °F). Pat the chicken dry with a paper towel. Mix the yogurt with the crushed garlic, salt, and pepper, then coat the chicken inside and out with the mixture.

  2. Set the chicken over the beer

Pour the beer into an open can or a beer can chicken roasting stand and place it in the center of a roasting pan. Lower the chicken cavity over the can or stand so the chicken stands upright. Pour the water into the pan, or arrange potatoes around the chicken for a side dish.

  3. Roast

Roast at 180–200 °C (350–400 °F) for 1 to 1.5 hours, depending on the size of the chicken, until the skin is golden brown and the juices run clear when the thigh is pierced. Carefully lift the chicken off the container and let it rest for 10 minutes.

Tip: Do not use an ordinary drinking glass for the beer, as it may crack in the hot oven. Wear oven mitts when lifting the chicken off the can, as the beer inside is boiling hot.
