Šúľance with poppy seeds are Slovak potato dumplings made from a dough of boiled, mashed potatoes, egg and all-purpose flour. The dough is rolled into thin ropes, cut into pieces 3–4 cm long, boiled in salted water and tossed in lightly browned butter and in poppy seeds mixed with powdered sugar.

The same potato dough is also used for plum dumplings with cinnamon.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the potatoes

Boil the potatoes in their skins until just tender, peel them and press them through a potato ricer while still warm. Weigh out 350 g and let them cool.

  2. Make the dough

Add the egg, a pinch of salt and the flour to the potatoes and quickly work into a smooth dough. On a floured board, roll the dough into thin ropes and cut them into dumplings 3–4 cm long.

  3. Cook the dumplings

Add the dumplings in batches to boiling salted water and cook until they float to the surface, then for about 2 more minutes. Remove them with a slotted spoon and let drain.

  4. Coat in poppy seeds

Mix the poppy seeds with the powdered sugar. Melt the butter and let it brown lightly, add the dumplings, sprinkle them with the poppy seed mixture and toss to coat.

Tip: Knead the dough briefly and use cooled potatoes; warm potatoes would make the dough sticky and soak up more flour. Cook the dumplings in batches so the water doesn't cool down and they don't stick together.
