This oven-baked version of cigánska pečienka, a popular Slovak pork dish, cooks the meat and potatoes together in one roasting pan. The pork is marinated a day ahead in gyros seasoning, honey, oil, and light lager to let the flavors blend. It is then layered in the pan with sliced potatoes, onion rings, and diced bacon. The dish bakes under foil at 200 °C (400 °F) and also includes garlic, sour cream, chili, and parsley.

  7. Meanwhile, prepare the sour cream sauce: mix the sour cream with the pressed garlic and season with spices to taste.
  8. Shortly before the end of baking, remove the pan from the oven and uncover it. Pour the sour cream sauce over the contents and bake uncovered at the same temperature until the sour cream begins to brown.

Tip: Before pouring on the sour cream sauce, pierce the bottom layer of potatoes and the meat with a knife—the potatoes must be tender and the meat juices clear. If they are not ready, bake a little longer under foil.
